As a result of all this opinionating, sometimes there is not enough talking about cooking itself. Why do we do the things we do? How does it affect the outcome?
While we often talk of cooking within a cultural context, there's also a lot of science and structure to cooking that can be hard to learn from following recipes. This chapter will contain general musings on cooking, interspersed with the odd lesson and experiment.
